Grüner Veltliner has caught on recently among wine stewards and their more savvy clientele because it is compatible with so many dishes—even well-known wine-killers such as asparagus and artichokes. Grüner Veltliner often shows up on wine lists in upscale Asian restaurants, particularly Vietnamese, where it is nicely paired with dishes seasoned with lemongrass and the other powerful and pungent seasonings characteristic of that cuisine.

Wine Regions
Three short decades ago, there was little to discuss about wine regions outside of France, other than the Napa Valley, perhaps, where some brash young upstarts had demonstrated California’s potential. What about German wine? A long and proud tradition to be sure, but too sweet. (Not necessarily true, then or today.) And what to do with Italian wine? Drink it with spaghetti and stick a candle in the empty. (It is true that back in the 1970s, the Italian wine industry was still being dragged, kicking and screaming, into the twentieth century.) South American wine cost about $2 and just gave you a headache . . . it was only a slight improvement over Mexican tap water. Australian wine? Banana juice! (This country’s early efforts had a lot more fruit than acidity.) And forget South African Wine—that country was politically embargoed right out of the wine boom until the 1990s. New Zealand wine wasn’t happening yet. And as for Spanish wine, it was good for making sangria, maybe. (Some old-style Spanish reds were aged for a decade in oak casks, robbing them of any fruit whatsoever.)
The wine world has changed considerably in the past thirty years. Scientific progress led to the large-scale modernization of commercial winemaking, which then made it possible to update traditional wine regions and develop new and promising sites all over the globe. Adventurous wine lovers can now enjoy high-quality wines from some twenty different nations whose wares usually reflect in some way the old European wine traditions and styles while also imparting some unique twists of their own.
